Ingredients

8 oz (about 1 c) cooked salmon (canned is fine)

1 egg white

1 t dijon mustard

1 T bread crumbs

1 T flour

2 t lemon juice

1 scallion

Salt & pepper to taste

2 T reduced-fat mayo

    

Directions:

In a bowl, combine salmon, egg white, mustard, bread crumbs, flour, 1 t lemon juice and all BUT 1 t scallions.  Season with salt and pepper.

Heat skillet over medium-high heat.  Shape salmon mixture into two patties.  Coat skillet lightly with cooking spray.  Cook patties, turning once.  Cook each side for three minutes or until gold brown and cooked through.

Stir mayo, remaining lemon juice and scallions together.  Top patties and serve.
